Vegan Chickpeas Quesadillas

Today, we’re making Chickpease Quesadillas that are good if you’re vegetarian but also good if you’re Vegan

After hearing my friends say we’re having quesadilla for lunch or a snack or even Dinner, I started feeling kinda left out since quesadillas are full of cheese.

So I started watching recipes online on how to make Vegan Quesadillas and then finally tried to make one.

This recipe is inspired by a lot of what I saw online, but I also tried using things I had at home to avoid spending unnecessary money.


Cashew cheese Sauce

1 cup soaked cashews

1 tbsp salsa sauce/hot sauce/buffalo sauce – We used this hot sauce, literally my favourite and it goes with so many other recipes as well

2 tsp nutritional yeast

1 tsp cumin powder

1 tsp chilli powder

1/2 cup vegan milk/yogurt 

2 tbsp vegetable broth/water



Salt to taste

And 6 tortilla wraps – We used these

1 cup chickpeas soaked overnight and cooked

2 small onions chopped

4 cloves minced garlic

1 tsp cumin powder

1 tsp chilli powder

1/2 cup vegetable broth

4-5 chopped spring onions

Handful of sweet corn

2-4 tbsp salsa/buffalo sauce etc – We used this hot sauce, literally my favourite and it goes with so many other recipes as well

2 tsp vegan butter

Putting it all together

Take a frying pan and add 1 tsp of oil. Once the oil is hot, lay your tortilla on the pan.

Now on top of the tortilla, add some of the filling. Make sure that you put the filling only in the centre and leave the ends empty. Generously add the cheese sauce on top of the filling.

Take another tortilla and put it on top of the filling. Make sure the tortillas close properly at the ends, otherwise when you flip the tortilla there is a chance of the filling falling off.

Once the tortilla has been cooking for 3-5 mins, take a spatula and slowly turn the quesadilla around to cook the other side.

Pro Tip: Cover the tortilla with a plate and flip the pan, and then from the plate lay the otherside of the tortilla on the pan to cook.

Your quesadilla should be ready in about 3-5 mins. Take a knife or pizza cutter to cut into 4 pieces.

How to make Cheese Sauce

In a blender, put the below ingredients

  1. 1 cup soaked Cashews
  2. 2 tbsp of salsa sauce: You can use any type of salsa, if you want a spicy sauce then use a spicy salsa sauce or buffalo sauce
  3. 2 tsp nutritional yeast for cheesy flavour
  4. 1 tsp cumin powder
  5. 1 tsp chilli powder
  6. ½ cup vegan yogurt or vegan milk
  7. 2 tbsp vegetable broth, you can use water or left over water from the chickpeas that you soaked for the filling

Blend all the ingredients together, until you get a sauce like consistency. Set aside

How to make Filling

In a pot, put 2 tsp of Vegan butter and 4 tbsp of the salsa/hot sauce and mix until it mixes.

You can use a non spicy sauce if you do not like spicy food. Make sure to taste after putting 2 tbsp of the hot sauce and then add the rest

Next, in a saucepan, take 2 tsp of oil.

Once the oil is hot, add minced garlic.

Wait for the garlic to cook a little and then add 2 chopped onions

While the onions to caramelize, take a fork or a masher and mash 80% of the chickpeas.

Now to the saucepan with the caramelized onions add the below ingredients and mix well Chickpeas

4-5 chopped spring onions

Handful of corn

1 tsp of cumin powder

1 tsp of chilli powder

If the filling starts to stick or becomes too dry, add a little vegetable broth or water to stop it from burning.

Once everything is mixed well, add the butter and hot sauce mix that you made earlier.

Let it cook for 3-5 minutes.
